After a fun trip to Pune, I am back again in Chennai and enjoying the busy life meeting friends(Vj's friends), shopping(not for me, for the wedding 😉 hahaha) and looking forward for this week with house fully packed with guests for the wedding.
Yesterday I was supposed to post this, but somehow could not post. When I was short of posts, Jeyashricame up with this guest post idea, I was really happy and relieved 🙂
Of course I need not cook, click, edit, type and make a post but I can just copy paste and publish the post 😉 Thank you so much Jeyashri for the timely help, you always help me a lot 🙂
And regarding this recipe, I have never tried making ice cream at home and never thought also. I don't have a label Ice cream in my blog. Now, I am creating one 🙂 and hope I could try some in the future.
I have tasted mango Ice cream at her home, she promised me to make this one as well whenever I visit her! Lucky me 😛 So here's Jeyashri's custard powder ice cream.

Ice cream is always special to me and this post is even more special to me, as this Vanilla custard powder ice cream i am posting as a Guest Post for Rak's Kitchen.
Though i got introduced to her through blogs, now a days our weekly chat sessions will rarely involve in matters relating to our blogs.
This Vanilla custard powder ice cream I wanted to make for a very long time, but many times the Indian store here, doesn’t have Vanilla flavored Custard powder.
Recently I saw in a shop and bought it immediately. The ice cream came out super softy and creamy. But only sad part is I wanted to share the ice cream with Raji, but when i visited her home the other day, i totally forgot to take it with me.

Custard powder Ice cream recipe
Custard powder Ice cream recipe - No need for ice cream maker or any complicated things to make this delicious yet easy recipe!

Cup measurements
Ingredients
- 1.5 tablespoon Custard powder Vanilla flavour
- 5 tablespoon Sugar
- 2 cups Milk
- 2 tablespoon Cream
Instructions
Boil the milk in a saucepan, reserving 3 tablespoon of milk aside.
Mix the custard powder in the 3 tablespoon of milk into a smooth paste without any lumps.
Add this custard mixture to the boiled milk and keep the flame low. Stir it continuously for 2 minutes.
The mixture will give a thick custard. Let it be like a dosa batter consistency.
Add sugar to it and put off the flame.Allow this custard to cool down completely.
When done, add cream to this ( i used the Nestle cream) and whip in the mixer for a minute.
Pour this mixture in a freezer safe box and freeze it for an hour.
After that take out and whip it again for a minute. Repeat this step 2 times . this is to avoid the formation of Ice and to get a creamy texture.
After doing the whipping process for 3 times, freeze the ice cream mixture for 5-6 hours.
Your vanilla custard powder ice cream is done.
Notes
- You can use any flavor of custard powder.
- To the custard powder mixture, instead of sugar you can add condensed milk to get a rich taste.
- You can add nuts to this after you finish off the whipping process. You will get the nutty bits while having ice cream.
- Do not add custard powder more than the quantity mentioned.

Ingredients

- Allow this custard to cool down completely.
- When done, add cream to this ( i used the Nestle cream) and whip in the mixer for a minute.

Notes

Crystal formation will happen if you do not whip it up 3-4 times and keep the container open in the freezer.
And the texture of the milk too makes a difference. Just take it out from the freezer and run in the mixer 2 times extra everyone hour and set it in a covered container. This will surely come out creamy. I have tried it few timesReply

Looks delicious Raji and jey. How is the taste? I once tasted it a friends house and felt some gritty texture which I did not enjoy a lot! This one looks creamy though! How are you doing Raji? Enjoying yourself in chennai???

i tried tis recipe yesterday, as u said i wipped the mixture 5 times but tn also tat ice crystal s forming:(
after wipping tat miture 5 times also the mixture was in pouring consistency not in creamy consistency:( i stored in tupperware box oly. one more thing , wn i added tat custard powder milk in boiled milk and stirred cont. oru madhiri thiri thiriya form aachu. wt s wrong in my procedure?? pls can u clarify????Reply

I gues may be the custard powder may be not good or the milk may not be good which we couldn't find out. Sometimes the crystal formation may be because of the texture of the milk too so add 1 tblsp extra cream or use full cream milk.

If you don't add cream you won't the ice cream perfect. As far as i know no substitute for that.

I do not know if we get Nestle cream here in Chennai, but we sure get Amul cream. Most grocery shops stock Amul "Fresh" cream.
I do not think it will be as thick as the Nestle cream shown here in the pic.. but you can still try it out.

Hi Raks.. I tried and tried to find cream at all the India grocers but failed 🙁 can I an alternative? Can I use whipping or heavy whipping cream or half n half instead? These are the 3 options I really have right now. I am super excited to try this recipe but the cream is holding back my reins.. Please help !!!

You can find nestle cream where ever they keep milk maid. Or in the place where they keep cheese etc.

The cream will have it's effect for sure. Try freezing and if the texture is not right, the cream quality might be the culprit. Let me know how it turned out to be.

I used amul cream but it's not as thick as used... It came out in pouring consistency.. i deep freezed from 4 hrs.. it's still now thickened
