Appetizer time! Who is in? I can’t help it but the more I make bite-size appetizers the more I like them! What I love about them is that you can really bring out your creative side (well, at least that’s what I think, anyway)!
Buy your favorite ingredients and start experimenting. If you are wondering what size they should be, then in general as long as you create bite-size snacks, then you have succeeded.
I think originally the idea was to be able to put them in your mouth in one go (I mean one at a time, not all of them) but I’ve seen some of them quite small in size and others way too large.
By the way, I am the type of a person who usually eats canapes in 2-3 takes because I just enjoy it that way better. What type of a canape eater are you? The all-in-one or take-your-time one? Let me know.
Oh and guess what? There will be more party food recipes coming this year. Come to think of it I could name this year “The Year of Appetizers”. I will try to make at least one new recipe every month because why not? They are fun to make and people love them!
Ok, so just to be clear, these savory palmiers are not really bite-size appetizers. They are on the bigger side. But still, they qualify for appetizers!

How to make blue cheese palmiers
Preheat the oven.
Get the pre-rolled puff pastry. To make these blue cheese palmiers you will need a rectangular shaped pastry, not a round one.
Prepare the filling by mixing grated apple and blue cheese. Don’t forget to get rid of the apple juice (a kitchen towel or a cheesecloth are handy – save the juice for drinking. You won’t get much, maybe about a ¼ cup but there is no point in wasting the vitamins! Also it tastes amazing!).
Assembling puff pastry palmiers is not difficult or time consuming. First, spread the apricot jam in a very thin layer across the puff pastry sheet. Now spread the filling over. Again try to spread it as evenly as possible, making sure you have covered every part of the pastry.
Make sure the longer side of the puff pastry rectangle is facing you. Take the bottom end of the pastry and fold toward the middle, but only halfway. Repeat with the top side (Check the pictures for easier understanding).
We will repeat the same process again but this time you will fold the ends towards the middle. When you have done this, take a serrated knife and carefully cut the “sausage” into about 0.5 inch (1.5 cm) slices. You could cut them a bit thicker but don’t go too thick.
All you have to do now is transfer each slice onto a baking tray and bake them. Don’t forget to line the tray with baking paper first.

Note: Puff pastry is one of the pastries that I always buy. I have never tried making it at home and so far I have been happy with the shop-bought one.
I only buy the pre-rolled one because that’s what I can get from our local supermarket. However, making one from scratch is on my To-Do list but not sure when I will get the chance to “play” with it.
If you are a master at puff pastry making, then please go ahead and make one yourself!
Either way, these blue cheese palmiers will taste amazing!
So that’s about it! 15 minutes in the oven and they are ready to be served! They taste delicious whether they are warm or cold.

Ingredients
- 1 puff pastry , pre-rolled sheet (14×10 inch/36×26 cm – 10 ounces/275 grams)
- 2 tablespoons apricot jam
- 2 apples (large)
- 4.5 ounces blue cheese (130 grams)
Instructions
Rinse, core and grate the apples. Transfer them to a clean kitchen towel or cheesecloth and squeeze out the juice (save it for drinking, it’s delicious).
In a mixing bowl, combine grated apples and blue cheese, crumbled. Use a fork to crush any large cheese pieces.
Place the pre-rolled puff pastry onto a chopping board. Spread over a thin layer of apricot jam and top with a blue cheese mixture. Make sure it is evenly distributed all over the puff pastry sheet.
Now make sure the longer side of the puff pastry rectangle is facing you. Take the bottom end of the pastry and fold toward the middle, but only halfway. Repeat with the top side. Again, take the bottom but this time fold the ends right towards the middle. When you have done this, take a serrated knife and carefully cut the “sausage” into about 0.5 inch (1.5 cm) slices.
Transfer them onto a baking tray lined with baking paper and bake at 400°F/200°C for 15 minutes or until golden brown. You should easily see the pastry being cooked through – it will change its texture completely – it will puff.
Serve warm or cold!
